Gluten free, dairy free, egg free, oil free other than spraying the pan, and only 1/2 cup sugar.
1/3 cup plant based milk
1 ripe banana
1 tablespoon ground flax seed (flax seed meal.)
1/2 cup Florida crystals (raw cane sugar)
2 teaspoons vanilla extract
1 heaping teaspoon lemon zest
*1 1/4 cups oat flour
*1/4 cup almond flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons cinnamon
3/4 teaspoon nutmeg
1 cup shredded zucchini
1/3 cup chopped pecans
You can use any kind of flour. A whole wheat flour would make the bread slightly lighter than the oat flour would, or use half and half. Also the almond flour or any nut-based flour adds a natural nut-oil to the recipe, so it's not as sticky.
You can substitute allspice for the nutmeg.
You can also substitute maple sugar for the Florida crystals. I'd use white sugar and flour in a pinch, and did during the first weeks of our change, before the cupboards were re-stocked.
Preheat over to 350. Spray a loaf pan's bottom and sides with olive oil cooking spray, or wipe oil onto the pan with a paper towel. If you're an absolutely no oil type, then line the pan with paper and consider using a little more almond flour in the recipe, reducing other flours an equal amount.
Mash the banana in a large bowl. Add plant milk, flaxseed, sugar, vanilla, and lemon zest. Beat smooth.
Sift the baking powder, baking soda, salt, cinnamon, nutmeg and flours together into a separate bowl to mix them up. Then add to the banana mixture and beat it til smooth, not too much.
Shred the zucchini in your food processor or using a box grater. Then fold the zucchini and pecans into the batter until evenly distributed.
Pour into loaf pan and bake on middle rack in pre-heated oven.
Bake for 70 minutes. Leave in the pan for another 30 minutes. The inside will keep cooking and firm up more. The toothpick testing method is a bit misleading as it can come out clean even with a doughy consistency remaining in the middle. I actually sliced into it, then put it back in for 5 more minutes.
Slice and enjoy! I added a pat of Earth Butter while it was still warm. DELICIOUS.
