Best Vegan Crockpot Ramen Ever

This is a super easy, yummy, satisfying recipe that takes about 20 minutes of veggie chopping to put together. If you start it in the morning it'll be ready for lunch. Start it midday and you've gone dinner in the bag. And it makes a whole pot full.


  • 1 medium onion, diced

  • 4 stalks celery, diced

  • 5 cloves garlic, minced

  • 1 orange bell pepper, diced

  • 5 potatoes, diced

  • 2 tablespoons Better than Bouillon Vegetable Stock

  • 2 tablespoons tomato paste

  • 2 packages Ramen Noodles, any flavor*

  • 1 & 1/2 cartons veggie broth

*It doesn't matter what flavor Ramen you choose, because you toss the seasoning packets. Ramen noodles are vegan, but most of those seasoning packets are not.

**Add seasonings to your taste. I like a bit of curry powder in mine.


1. Dice all the veggies and toss them into the crockpot.

2. Pour some of the broth into a small bowl and whisk in the Better than Bouillon Base, pour over veggies.

3. Add the rest of the broth, cover and cook on high for about 4 hours or until the veggies are tender.

4. When everything is done, throw in both packets of Ramen, cover and continue cooking for another half hour. Then turn the crock pot OFF.
