With a nickname like Mac, you probably knew a tasty Mac-n-Cheese post was on my to do list. Well here it is! I tried so many recipes before coming up with this combo. It is heavily inspired by the instant pot Mac-n-Cheese recipe from the fine folks at Forks Over Knives, but I wanted add a healthy veggie kick and switch up the crumb topping a little to suit my personal taste. I hope you love this as much as I did!
Playing around: You could adapt this base recipe in any way you want. Add spinach and artichokes before the last sauté for a veggie-licious spin. Stir in some taco seasoning and vegan meat crumbles for taco mac. Add your favorite chicken replacement and hot sauce for buffalo mac. If you don’t have one of the vegetables in the sauce on hand, just omit it. The recipe works best with roasted red peppers, but you switch up the other veggies or leave them out altogether. It’s quick, versatile, and tasty AF. And easy enough for a weeknight, especially if you boil your veggies ahead of time.
