Mac's Favorite Vegan Veggie Paella


1 cup short grain brown rice

1 tsp onion powder

1 tsp garlic powder

1 tsp turmeric

1 tsp salt

1 tsp black pepper

1 medium onion, chopped

1/2 red bell pepper, chopped

2 cloves garlic, minced

1 TBSP olive oil, (optional)

1 tsp smoked paprika

1 3/4 cup vegetable broth

1 cup cherry tomatoes, halved

1 small jar marinated artichoke hearts, drained and rinsed

2 TBSP lemon juice

1 cup frozen peas

1/2 cup zucchini, yellow squash, or both

salt and pepper to taste


Sauté onion, pepper, and garlic in olive oil (if you don't want to use oil, use broth or water to sauté vegetables for 2-3 minutes. Add rice, dry seasonings, and broth. Bring to a boil. Lower heat and cover. Simmer for 15 minutes.

Take a break to play with puppies.

Remove cover and add zucchini, peas, tomatoes, artichokes, and lemon juice. Cover again and simmer for 10-15 more minutes or until all the liquid is absorbed.

Once liquid is absorbed, remove lid. Turn heat up to medium and cook for an additional 2-3 minutes until rice is crisped on the bottom of pan. Add salt and pepper to taste.

Serve and enjoy!

Playing around--you can literally add whatever veggies you have on hand and this will be delicious. You could also add vegan chorizo, baked tofu, or your favorite vegan protein if you're craving a meatier dish. Happy eating!
