Plant-Based Belgian Waffles


Ingredients

2 Flax Eggs or egg replacer

1 and 1/2 cups whole wheat flour

1/2 cup oat flour

1 tablespoon almond flour

4 teaspoons baking powder

1/2 teaspoon salt

2 cups plant milk

1/2 cup applesauce

1 tsp vanilla

1 tablespoon maple syrup

1 tablespoon oil (optional)


Egg Replacer - Do This First

To replace 1 egg, mix 1 tablespoon flax seed meal, also called ground flax seed, with 3 tablespoons of water. Wait 15 minutes before using. (For this recipe, double this, as you need two "eggs.")


How to

Sift together the dry ingredients in one bowl.

Mix the wet ingredients in another bowl.

Add dry mix to wet mix, stirring gently just until it's all combined. Do not over mix.


A light coat of cooking spray will help keep it from sticking. Pour onto a hot waffle maker and cook until done. For my Belgian waffle maker, this takes a solid 6 1/2 to 7 minutes.


Top with fresh fruits and maple syrup.


Hints

I hate using cooking spray on my Belgian waffle iron as it degrades the non-stick coating. I think this is what killed my last one, and I absolutely LOVE my waffle iron. So I add a little bit of oil to the recipe which helps, and using nut flours also helps add a touch of oil for less sticking.
