Vegan Blueberry Muffins




Ingredients

1 1/4 cup oat milk 1 teaspoon apple cider vinegar 1 cup all white flour

1 cup whole wheat flour 3/4 cup Florida Crystals or other raw unrefined sugar 2 teaspoons baking powder 1/4 teaspoon salt 1 tablespoon arrowroot powder 1/3 cup applesauce

1 tbsp canola oil 1 teaspoon pure vanilla extract 1 1/2 cups fresh blueberries 1-2 tablespoons Florida Crystals, optional, for sprinkling the tops




Instructions

Preheat the oven to 400 degrees F. Use silicone muffin pans.

Combine the milk and vinegar and set aside while you do the rest.

Whisk together all the dry ingredients.

Pour in the milk/vinegar mixture, oil, applesauce, and vanilla. Stir, but don't over mix.

Fold in the blueberries. Fill muffin pans 3/4 of the way full.

Bake for 30 minutes, until a toothpick inserted comes out clean.


Cool for 20 minutes and enjoy!
