Vegan Pide: Turkish Flatbread Canoes

If you've never heard of Pide, you're not alone. I hadn't heard of it until I started experimenting with vegan recipes. This is not a weeknight recipe and takes some time to prep and bake, but oh is it ever worth it. It's like a delicious combination of pizza and eggplant parmigiana with a spicy kick, all topped off with a crunch from toasted walnuts and a delicious kick of fresh mint! Slice it and serve as a great hand held appetizer or (if you're like me) stick the whole damn boat on a plate and eat it yourself.
A couple of pointers here! The dough definitely tastes best if you actually let it rise overnight in the fridge. Trust me, it's worth the extra time for all that yumminess.
You could definitely mix this one up with different ingredients if you're feeling frisky. Throw in some your favorite plant based meat crumbles or sausage. You could totally switch the ingredients and make a totally different filling. The sky is the limit!
